All these delicious cake options are tempting, but sometimes it is nice to have an easy-to-make, quick-to-whip-up recipe available for any occasion. This simple fall dessert bar recipe can be made under an hour and days before your event. You can also add any fruit toppings. It’s easy and versatile.

What’s in No-Bake Caramel Apple Cheesecake Bars?

These delicious treats are made from a Biscoff cookie, pecan crust, cheesecake filling and apple pie topping.

Ingredients

These no-bake cheesecake bars can be made with the following ingredients:

  • Biscoff cookies
  • Pecans
  • Granulated sugar
  • Butter without salt
  • Cream cheese
  • Heavy whipping cream
  • Lemon juice
  • Tart apples
  • Cinnamon
  • Nutmeg
    • Brown sugar
    • Vanilla extract
    • Corn syrup
    • Salt

How to make No-Bake Caramel Apple Cheesecake Bars

  • A parchment paper sheet should be placed on an 8″ x 8″ baking dish. To make it easy to remove the bars from your pan, ensure that the parchment paper runs along the sides of the pan.
  • In a food processor, combine Biscoff cookies with pecans, sugar, and melted butter. Blend for several minutes until the mixture looks like wet sand.
  • Place the crust in the pan and press down.
  • The heavy whipping cream will be whipped to stiff peaks. Set aside the cream cheese, sugar, and lemon juice while you combine the cream cheese, sugar, and lemon juice.
  • After the cream cheese mixture has been smoothened, fold in the whipped topping. Keep covered and refrigerated until ready for use.
  • The apple pie topping is made by peeling the apples and dicing them. Cook the apples until softened. Drain any extra liquids. Allow cooling.
  • The sugar, water, and corn syrup will be combined over the stove to make caramel. The sugar mixture will begin to cook when heated on medium heat. When the mixture turns an amber color, take it off the heat and slowly add cream, vanilla, and salt.
  • Layer the bars once all the elements have been made and cooled down to room temperature.
