Peanut Butter Obsession
You probably already know about my deep love of peanut butter. Correct, obsession with peanut butter would be better! It can be paired with almost any food. It was even served on a hamburger at Lucky 13 Salt Lake. It was delicious! Peanut butter in a peanut butter and jelly sandwich is one of my favorite ways to enjoy it. My go-to options are smooth Skippy peanut butter, strawberry jam, and white bread. Hmmm. It’s funny. A PB&J sandwich is a staple in my life. I decided to make it into a cake.
Peanut Butter and Jelly Cake
I tried several peanut butter cakes a few years back but was not impressed. The peanut butter flavor was lacking in the recipes I tried. I combined ideas from other people and added a few of my ingredients to create my recipe. The cake layers turned out so well!
I used cake flour to ensure that the cake layers were tender. According to other recipes, all-purpose flour combined with peanut butter made the cake too dense. My recipe also includes buttermilk, peanut butter, and cinnamon. Wow! This cinnamon is a game-changer. Although it’s only a hint, I believe that this makes the cake what it is.
Peanut Butter Buttercream
My mom’s strawberry jam is used for the filling. It’s the best, I promise. Don’t worry if you don’t have any homemade jam. You can use your favorite store-bought jam. I used a peanut butter frosting recipe I love and already have from Annie Eats. Instead of whipping cream and folding it in at the end, I added some cream to the end and whipped up the frosting mixture as I normally do. It’s still creamy, smooth, and delicious. However, it has a little more stability.
