Ingredients for Cupcakes

* 1 1/2 cups all-purpose flour

* 1/4 cup unsweetened natural cocoa powder

* 1 cup granulated Sugar

1 teaspoon baking soda

* 1/2 teaspoon salt

* 1 cup of brewed coffee

* 1 Tablespoon white vinegar

Vanilla extract – 2 teaspoons

1/4 cup plus 2 tablespoons olive oils

Ingredients for Frosting

* 4 tablespoons butter

1/3 cup unsweetened natural cocoa powder

* 1/2 cup powdered sugar

* 3 tablespoons milk

* 1 tablespoon vanilla extract

Let’s get started with baking:

Pre-heat the oven to 350°F. Place the middle rack inside. Line the cupcake tins up with the liners.

Mix flour, cocoa powder and sugar in a bowl. Add salt to taste. You want to make sure there are no lumps in your batter.

Mix the vinegar, coffee, vanilla extract, olive oil in a separate bowl.

Mix the dry and wet ingredients together by pouring one into another.

* Don’t overmix the batter. It shouldn’t be too lumpy or thin.

* Fill the cupcake tins already prepared with approximately two-thirds the batter.

Place the cupcake tins in the oven for 18 to 20 minutes at 350°F. Take a bamboo skewer and check the doneness.

Mix together melted butter, powdered sugar, and cacao powder to make frosting. Mix in the milk and continue whisking until there are no lumps. Mix in vanilla extract. Whisk the batter until it becomes light and fluffy.
