The cake we will be discussing today is your favorite cream cake recipe. This Italian cream cheese cake is loaded with coconuts, pecans, and topped with a delicious cream cheese frosting. Ingredients
Cake
* 5 large eggs (separated).
* 2 cups all-purpose flour
1 cup buttermilk
* 1 teaspoon baking soda
* 1/2 cup shortening
* 2 cups granulated Sugar
* 1 cup sugared and flaked coconut
* 1 stick (1/2 cup), unsalted butter (softened).
* 1 1/2 tsps vanilla extract
* 1 cup chopped, divided pecans
Frosting
* 1 (8-ounce) package cream cheese (softened)
* 1 tsp vanilla extract
* 1 stick (1/2 cup), unsalted butter (softened).
* 1 to 2 tablespoons milk/cream (depending on the need)
* 1 (1-pound), box confectioners’ sugar (3 3/4 cups unsifted).
Garnish
1/4 cup chopped toasted pecans, 1/4 cup toasted flaked coconut
Instructions / Recipe
Make the cake
* Combine all ingredients.
Preheat oven to 350°F. Butter three 8-inch cake baking pans and flour them.
* Place the egg whites in large bowl. Beat until they form pinnacles.
Mix the flour, baking soda and salt in a separate bowl.
* Use an electric blender to blend the butter and shortening in a large bowl.
Add the granulated sugar to the butter mixture and beat it until smooth and creamy.
* Add the egg yolks to the batter and beat well.
* Add the flour and baking soda mixture to the butter mix in portions.
Add 1/2 teaspoon vanilla. Add the coconut and chopped nuts.
* Continue to overlap the egg whites until you have a uniform batter.
* Divide the batter equally between the three prepared baking containers.
Bake in the oven for 26-31 minutes or until a toothpick inserted into the centre comes out clean. Let the cake cool completely before inverting it onto a wire rack.
Frost and Assemble
* Mix the frosting ingredients together.
* While the cake bakes, beat the cream cheese and margarine together until smooth.
* Beat in confectioners’ sugar. Add vanilla to the mixture and mix until smooth.
* For icing that is extremely hard, add some milk or cream to achieve a spreadable consistency.
* Layer the layers of cake, then spread the icing among them. Ice the top and sides of the cake.
* Add 1/4 cup chopped nuts and 1/4 Cup coconut to your liking.
* Slice the cake and serve!
