APPLE CRUMB CAKE

Baking for family and friends is a joy, especially during the holidays. Tradition recipes are passed down from generation to generation and made with love for those you love. The classic crumb cake recipe was shared by a friend years ago. We then take it down a notch when we add chunks of fresh apples, cinnamon, and a double crumb topping. You read that right. Double crumb topping This recipe is not complicated or too fussy. This recipe is easy to put together and bakes beautifully. It's a great addition to your fall baking repertoire. The hardest part about this recipe is the waiting. You'll want to eat a piece of this apple-cinnamon delight as soon as you smell it in your kitchen. It's best to let it cool down before you let your family dig in. If they are anything like mine, they slice it and eat it warmly. We are baking it as two loaves so you can share your cake. You can wrap the second loaf in a bow and thank someone special in your life. I asked Mr. Sellman whether he felt this recipe was too heavy with the crumble topping. You can't have too much crumble, he replied. I couldn't agree more. A crunchy-sweet, cinnamon-scented streusel topping is hard to resist. This is the perfect accompaniment to moist, tender cakes with fresh apples. It's like Mr. Sellman being my perfect companion... He eats it; I bake it. My guy is so wonderful, and I am grateful for all his taste-testing over time. It's hard work, but someone has to do it. It's him, and I'm so glad he is. This crumb cake was made with apple chunks, double crumble and In The Raw(r). I also replaced the regular sugar with In The Raw(r), an organic white sugar. Sugar In The Raw Organic White(r) is the latest member of the In The Raw(r). This sugar retains the same unbleached color as Sugar In The Raw(r), but it has finer crystals that make it ideal for baking and cooking. This sugar was used in my Pumpkin Cake, Cinnamon Cream Cheese Frosting. I thought it would be worth another try in this recipe. It worked well in both recipes, and I loved it in the crumble topping. Bake this Apple Crumb Cake and bring joy to someone's life! APPLE CRUM CAKE 1 3/4 cups all-purpose flour1 cup sugar In The Raw Organic White(r). 2 teaspoons cinnamon 1/2 teaspoon salt 3/4 cup cold butter, cubed 3/4 cup peeled and small diced apples
  1. Combine flour, sugar, cinnamon, and salt in a large bowl.
  2. Use a pastry cutter or a fork to work in Butter until the mixture is pea-sized.
  3. Mix in the apples. Keep in the refrigerator until ready for use.
The Cake: 2 cups all-purpose flour 1 teaspoon baking powder 1 teaspoon baking soda 1/4 teaspoon salt 1/2 cup butter softened One cup sugar in the Raw Organic White(r). 2 eggs 1 teaspoon vanilla 1 cup sour cream 2 cups peeled, small diced apples
  1. Preheat the oven to 350°F. Butter, flour, and parchment paper are all you need to make two 9x5" loaf pans. Set aside.
  2. Mix the dry ingredients in a large bowl: flour, baking powder and baking soda. Set aside.
  3. Use the paddle attachment to beat Butter and sugar in a bowl with a stand mixer. Blend until light and fluffy, approximately 4 minutes. Scrape the bowl's sides and bottom.
  4. Mix eggs one at a while, beating well between each addition.
  5. Mix in vanilla, and mix well.
  6. Mix the dry ingredients in a bowl. Turn the mixer to low. Next, add half the sour cream.
  7. Continue to add another third of the dry ingredients. Continue to add the remaining sour cream. Mix everything until well combined
  8. Add apple chunks.
  9. Divide the batter equally between the prepared pans. Sprinkle the crumble mixture on top of each pan.
  10. Bake for approximately 50 minutes or until a toothpick inserted into the center comes clean.
  11. Allow cakes to cool down for around 15 minutes, then take them out of the pans. To cool completely, place on a rack.
