If you are familiar with my recipes, you will know I have shared many vanilla cupcake recipes. I have spent hours baking many, many cupcakes and tasting them all! Although it's hard work, someone has to do it. My quest for the perfect vanilla cupcake paid off. This is a perfect version. How are they different? These cupcakes are light and moist without the need for sour cream. In this version, they use whole eggs, not just egg whites, which makes them velvetier. How to Make Vanilla Cupcakes

- Prepare Dry Ingredients and Preheat the Oven: First, heat your oven to 350F. Next, insert cupcake liners into your pan. Mix flour, baking powder, and salt in a medium bowl.
- Mix wet ingredients: Add butter, sugar, oil, and vanilla extract to a large bowl. Beat until it is smooth and creamy. It should take between 3-4 minutes. Next, add the eggs once a while, mixing well after each addition until everything is combined. To ensure that all ingredients are properly incorporated, scrape the sides of your bowl.
- Combine Dry and Wet Ingredients: Mix half the dry ingredients in a large bowl until well combined. Add the milk slowly to the bowl and stir until it is well combined. It might appear a bit curdled, but that's normal! This is what it should look like at this stage.
- Combine the Next Half of the Dry Ingredients. Add the remaining dry ingredients to the bowl, scraping down the sides as needed. Mix the batter until it is smooth and well combined.
- Make Your Cupcakes. Fill the cupcake liners with 3/4 of the batter and bake for 15-18 mins or until a toothpick inserted in the centre comes clean. Let the cupcakes cool in the pan for 15-18 minutes.
