Flourless Chocolate Cake Recipe

Ingredients

1 cup semisweet or chopped chocolate chips

1/2 cup unsalted butter

3/4 cup granulated sugar

1/4 teaspoon salt

1 teaspoon vanilla extract

3 large eggs lightly beaten

1/2 cup cocoa powder

Chocolate ganache:

1 cup chopped chocolate or chocolate chip

1/2 cup heavy cream

Instructions

1. To bake the cake, heat oven to 350 degrees F. You can spray the pan with cooking spray or place parchment paper in the pan. This will protect the chocolate cake from sticking to it. Set aside.

2. Heat the butter and chocolate together in a microwave-safe bowl. Continue heating until the butter is liquefied, and the chocolate chips or shavings are soft. This will take approximately a minute. Use a spatula to mix the molten butter with the chocolate until it becomes soft. Pre-heat the butter and chocolate mixture for at least ten seconds.

3. Mix together the dry ingredients sugar, salt, vanilla extract, and mix well. Mix the dry ingredients and then add the eggs. Add cocoa powder to the mixture once it is smooth.

4. Bake the cake in a baking pan for 25-30 minutes, or until it has a thin crust and registers 200°F on your oven thermometer.

5. Allow the cake to cool in the oven for at least ten minutes before turning it on a cooling rack.

6. While the cake cools, make the chocolate ganache. Melt the cream and chocolate in a microwave. After 20-30 seconds, check the chocolate and cream. Mix the mixture until it is thick enough to be used for decorations.

7. Place the chocolate ganache on the cooled cake. Let the glaze set for at least a couple of hours before you cut the cake. To reduce the time it takes to set the glaze, you can place the cake in the fridge.

8. Once the glaze is set on the cake you can cut and serve it. To decorate the cake, you can add cherries or powdered sugar.
