Vanilla Vegan Cake Recipe

Ingredients for: Vanilla Cake

220g All Purpose Flour

200g white sugar

1 teaspoon Baking Soda

1/2 teaspoon salt

240ml Soymilk (or any other non-dairy milk).

2 tsp Vanilla Extract

80ml Canola Oil or other vegetable oil

1 Tbsp White Vinegar (or sub-Apple Cider Vinegar)

Vanilla Frosting

450g powdered sugar

45g Vegan Butter

4 Tbsp Soymilk (or any other non-dairy milk)*

2 tsp Vanilla Extract

Decoration

Any fruit you choose, but strawberries are the best.

Procedure For: Vanilla Cake

* Preheat the oven to 350°F (180°C).

* Place the flour in a bowl.

Mix the sugar, baking soda, and salt.

Add the soy milk and vanilla to the bowl. Mix the mixtures with a hand mixer until it is well combined.

* Grease a round 7-inch cake pan with nonstick spray. Cut parchment paper into circles to fit the bottoms.

* Divide the batter equally between the two tins.

Place the individual tins in the oven. Bake the batter for 30 minutes.

Take the cake out of the oven. Now insert a toothpick into the middle. Your cake is ready if it comes out clean.

Place the cakes on a cooling rack. Let them cool completely.

Vanilla Frosting

In a bowl, combine powdered sugar, vegan butter and vanilla.

Mix on low speed. Slowly increase speed. Mix in the remaining soy milk until it becomes smooth and creamy.

* Add more powdered sugar to make your frosting thicker. If it is too thin, you can add more soy milk, one drop at a.

* Frosting must be thick enough to not slide off of the cake but thin enough so that it can spread evenly

* Frost your cake once it is cool.

* Place the second layer on top. Frost the cake completely with a knife.

* Decorate with fresh strawberries or any other fruit of your choosing, and serve immediately
